Foodie Friday: How to Make Healthy Spaghetti Squash
This blog post is the first (and maybe only) edition of Foodie Friday because I am admittedly not a Foodie unless eating the same foods day after day, week after week qualifies. I didn't think so.
I am not much of a cook. Hubby jokes that I would burn cereal or ruin boiling water. He thinks because I am part-Italian, genetically-inherited cooking skills should have been passed down through the generations. Not so much.
I figured out how to prepare the basics for healthy eating, but my husband is the more adventurous cook in the house. He enjoys cooking, and I enjoy eating, so it works out nicely. He calls himself Chef-Boy-Russ-G.
He made spaghetti squash the other night for dinner, and our conversation went something like this:
Russ: I took pictures of every step of the process of making dinner tonight.
Me: Ooo. Thanks, honey. I can use it on my blog.
Russ: No, I am going to write a blog about it.
Me: You don't have a blog. Are you going to start one?
Russ: I don't know. I might. "Cooking with Russ"
Me: Why don't you share on social media? Or (light bulb moment), why don't you share it on my blog as a guest post?
He ended up making a video slideshow instead that I thought was cool and funny and not just because I love him.
Spaghetti squash is a simple and easy meal to prepare, and when you include traditional pasta toppings, can be a delicious substitute for pasta. You can't go wrong with eating more vegetables.
HOW TO MAKE SPAGHETTI SQUASH BY CHEF-BOY-RUSS-G
SPAGHETTI SQUASH
INGREDIENTS
1 medium spaghetti squash
1 lb. ground turkey
2 cups red pasta sauce (low sugar or no sugar added)
mushrooms (add any veggies you like)
parmesan cheese
olive oil
salt and pepper
DIRECTIONS
Cut the spaghetti squash in half long ways.
Scoop out the seeds
Rub on olive oil, add salt and pepper to taste
Place both sides face down on a covered cookie sheet and bake for 45 minutes at 450
While the squash is baking, lightly brown the meat in a pan, drain the grease and return to the pan
Add mushrooms, veggies and pasta sauce and simmer
Once the squash is done, scoop out the "spaghetti" insides
Mix the squash and meat/sauce mixture together and serve.
So easy, even I could've handled it, but I only did the dishes on this one.
